April Recipe of the Month:

Larabar Copycat Recipes . . .

For all bars:   (All recipes make 6 bars.)

Put all ingredients into a food processor and blend until it starts to clump (about 3-5 minutes.)  Dump out onto wax paper or parchment paper and press with hands into an approximate  5X8 rectangle.  Place into freezer for about 10 minutes to make firm. 

Remove from freezer and cut into 6 bars, wrap in plastic, label with tape or sticker labels, and store in fridge or freezer. 

They don't NEED to be in the fridge or freezer, but if they get too warm, like on hot summer days, they are hard to hold because they become soft. 

**In recipes calling for chocolate chips, form the rectangle and before putting it in the freezer, sprinkle the chips over the top of the rectangle and press into the mixture, then freeze.

March Recipe of the Month:

Best Milk-Dunking Chocolate Chip Cookies Ever


These are soft cookies with a crispy edge.  They soak up and hold the milk really well without breaking too quickly.  A wonderful mixture of salty, chocolatey goodness in a yummy texture. Mmmmmmm!

1 c butter, softened and only 1/2 way melted (about 30 seconds in the microwave)
1 1/2 c brown sugar
2 t vanilla
2 eggs

Cream all above ingredients together, then add:

3 c flour
1 t baking soda
1 t salt
1 c milk or semi-sweet chocolate chips (I like to use 1/2 & 1/2)

Bake on greased cookie sheet at 375 degrees for 10 minutes.  No longer!  Let side on cookie sheet about 10-15 minutes to cool, then remove.



February Recipe of the Month:



Tropical Romance

1 cup each of the following:

apricots, halved and pitted (if not in season - just use extra peaches)
peaches, halved and pitted
pineapple tidbits, drained
mangos, pitted, peeled, and diced
bananas, sliced
coconut flakes
cashews, salted

Toss with:

2 T pure maple syrup
1/4 t almond extract
1/4 t rum flavoring

This is a very romantic dish!
